I leave the membrane on the bottom side as it keeps the juices in and also help prevent burning of the meat. I do not flip them as there is no meat on the underside and also helps to not burn them. On the grill usually 1.5 hrs to 2 hrs over charcoal (no lighter fluid, use the chimney to start them).
